Vanilla Cashew Cream
Makes 1 cup – Source – Learn Raw Food
Ingredients:
- 1 cup raw cashews, soaked for 8 to 12 hours (1-1/4 cups after soaking), drained and rinsed
- ¼ cup plus two Tablespoons water
- 1/3 cup almond milk
- 2 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon vanilla powder (optional)
Directions:
- Place the cashews, water, almond milk, maple syrup and vanilla extract in a blender and process until smooth.. Stop occasionally to scrape down the sides of the blender jar with a rubber spatula.
- Add vanilla powder and blend briefly.
- Chill in refrigerator for at least 1 hour before serving.
