Vanilla Cashew Cream

Makes 1 cup – Source – Learn Raw Food

Ingredients:

  • 1 cup raw cashews, soaked for 8 to 12 hours (1-1/4 cups after soaking), drained and rinsed
  • ¼ cup plus two Tablespoons water
  • 1/3 cup almond milk
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon vanilla powder (optional)

Directions:

  1. Place the cashews, water, almond milk, maple syrup and vanilla extract in a blender and process until smooth.. Stop occasionally to scrape down the sides of the blender jar with a rubber spatula.
  2. Add vanilla powder and blend briefly.
  3. Chill in refrigerator for at least 1 hour before serving.
