Sweet and Smoky BBQ Lentils
Ingredients:
- 1 cup lentils
- 5 cups water
BBQ sauce:
- 2 carrots peeled and chopped
- ½ large onion, chopped
- 2 cloves garlic
- ¼ cup apple cider vinegar
- 2 tablespoons molasses
- 2 tablespoons maple syrup
- 2 teaspoons ground mustard
- 2 teaspoons liquid smoke
- ¼ teaspoon chili powder
- ¼ teaspoon ginger (optional)
- 1/8 teaspoon cloves
Directions:
- Cook lentils – do not overcook
- In a pot, add carrots, onion, and garlic – cover with water by an inch or two, simmer until tender, 15 – 20 minutes.
- When vegetables are tender, drain and add to high speed blender along with the rest of the ingredients. Blend until smooth.
- Pour over cooked lentils and mix
- If sauce is too thin, simmer the lentils uncovered for a few minutes. If sauce is too thick, add tablespoons of water to thin out.
