Sweet and Smoky BBQ Lentils

Ingredients:

  • 1 cup lentils
  • 5 cups water

BBQ sauce:

  • 2 carrots peeled and chopped
  • ½ large onion, chopped
  • 2 cloves garlic
  • ¼ cup apple cider vinegar
  • 2 tablespoons molasses
  • 2 tablespoons maple syrup
  • 2 teaspoons ground mustard
  • 2 teaspoons liquid smoke
  • ¼ teaspoon chili powder
  • ¼ teaspoon ginger (optional)
  • 1/8 teaspoon cloves

Directions:

  1. Cook lentils – do not overcook
  2. In a pot, add carrots, onion, and garlic – cover with water by an inch or two, simmer until tender, 15 – 20 minutes.
  3. When vegetables are tender, drain and add to high speed blender along with the rest of the ingredients. Blend until smooth.
  4. Pour over cooked lentils and mix
  5. If sauce is too thin, simmer the lentils uncovered for a few minutes. If sauce is too thick, add tablespoons of water to thin out.
