Ingredients:
- 2-1/2 cups unsweetened applesauce
- ¾ cup date sugar
- 2 tablespoons pure honey
- ½ cup almond milk
- 2-1/4 teaspoon baking soda
- 1-1/2 teaspoon pure almond extract
- ½ teaspoon salt
- 2 cups strawberries chopped
- 3 cups white whole wheat flour
Directions:
- Preheat oven to 350 degrees F.
- Line 20-24 muffin pans with paper liners
- In a large bowl, mix applesauce, date sugar, honey, almond milk and almond extract.
- Add flour, baking soda and salt
- Fold in strawberries
- Pour into baking cups (about ¼ cup)
- Bake approximately 24 to 26 minutes. Let stand in the pan for 5 minutes then cool on rack.
