Spaghetti Rice
What You’ll Need:
- 8 ounces sliced fresh mushrooms
- 1 cup chopped onion
- 1 cup (about 4 ounces) whole grain spaghetti, broken into 3-inch pieces
- 1 1/2 cups whole-grain rice, uncooked
- 3 1/2 cups vegetable broth
- 1/2 teaspoon Mrs. Dash
- 1/8 teaspoon black pepper
What to Do:
- In a large saucepan over medium-high heat, heat 3 tablespoons water; add mushrooms and onion, and faux sauté until lightly browned. Add more water as needed.
- Add remaining ingredients, mixing well.
- Bring mixture to a boil, reduce heat to low, cover, and cook 20 to 30 minutes, or until all liquid is absorbed.*
*If rice is not fully cooked,,add water or broth and cook until rice is adequately tender.
