Southwestern Black Bean Pasta Salad

Ingredients:
- 16 oz. whole grain pasta
- 1-1/2 cups black beans
- 1-1/2 cups organic corn
- 1 red bell pepper, diced
- ¾ cup zucchini, diced
- 1 cup grape tomatoes, quartered
- ¾ cup red onion, diced
- 1 avocado, diced
- Salt and pepper to taste
Directions;
- Cook pasta – let cool completely
- Chop all vegetables – place in large bowl
- Place all ingredients for cumin dressing along with ingredients for jalapeno dressing – blend well (See dressing recipes below)
- Pour dressing over pasta and vegetables. Start with enough to coat, then add more before serving.
- Cover ansd store in refrigerator – add avocado before serving – the longer this sits – the better this salad is (within reason of course)
Creamy Cumin Ranch Dressing
- ¾ cup raw cashews, soaked
- ½ cup water
- Juice of one lemon
- 1 tablespoon apple cider vinegar
- 1 clove garlic
- ½ teaspoon onion powder
- 1 teaspoon dill
- 1 teaspoon sniped chives
- ½ teaspoon oregano
- ½ teaspoon salt
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
Directions:
- Blend in blender until creamy
Creamy Jalapeno Ranch Dressing
Creamy Cumin Dressing – doubled
- 2 jalapeno peppers
- 1 clove garlic
- 2 teaspoon cumin
- 2 teaspoons smoked paprika
Directions:
- Blend in blender until creamy
