Southwest Quinoa Salad

Salad Ingredients:
- 4 cups Vegetable Broth
- 2 Cups Quinoa
- 1 Cup Cherry Tomatoes
- 1 Cup Corn
- 1 Cup dried cilantro
- 1 Cup Orange Pepper, chopped
- 1 Cup Black Beans
- 1 Cup Red Pepper, chopped
- 1 Large Avocado
Southwest Dressing Ingredients:
- ½ Cup Cashews
- ¾ Cup Almond Milk
- 1 Tablespoon Apple Cider
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Onion Powder
- 1 Teaspoon Salt
- ½ Teaspoon Cumin
- ½ Teaspoon Chipotle Powder
- 3 Tablespoons Lime Juice
Directions:
- Add vegetable broth to a pot, then bring to a boil.
- Add quinoa, reduce heat and simmer for 30 minutes.
- Place cooked quinoa in a bowl then top with cherry tomatoes, corn, cilantro, orange pepper, black beans, and red pepper.
- Add cashews, almond milk, lime juice, apple cider vinegar, garlic powder. Onion powder, salt, cumin and chipotle powder to a blender, then blend until smooth.
- Add dressing to salad, then top with avocado
- Enjoy!
