Sauerkraut and Onions with Apples

Ingredients:

  • 4 pounds Sauerkraut drained and rinsed
  • 2 Vidalia Onions chopped
  • 2 Gala apples sliced thin
  • 24 oz. gourmet purple potatoes cooked slightly
  • 4 cloves garlic
  • 2 Tablespoons caraway seed
  • 4 vegan sausages (optional)
  • 2 cups low sodium vegetable broth
  • ½ cup white cooking wine

Directions:

  1. Put Sauerkraut in Crock Pot.
  2. Sauté (with water) onion and garlic and add to Crock Pot.
  3. Add apples, potatoes, sausages and caraway seed. Mix well.
  4. Add broth and cooking wine. Mix again.
  5. Put Crock Pot on high, check to see how ingredients are heating up.
  6. When everything is hot, dial back to low for a couple of hours.
