Root Veggie Mash

Ingredients:

  • 2 rutabagas, peeled and cubed
  • 2 parsnips, peeled and cut into chunks
  • 1 large potato, peeled an cut into chunks
  • Pinch of salt
  • ½ cup almond milk
  • ½ teaspoon salt
  • Pepper to taste
  • 1 Tablespoon of chives for garnish

Directions:

  1. Bring a large pot of water to a boil. Add the rutabagas, parsnips, potato and pinch of salt.
  2. Cook the vegetables until tender, approx. 15 minutes
  3. Drain and place in large bowl
  4. Add almond milk, ½ teaspoon salt and pepper
  5. Beat with an electric mixer and whip until fluffy
  6. Garnish with chives and serve immediately
