Root Veggie Mash
Ingredients:
- 2 rutabagas, peeled and cubed
- 2 parsnips, peeled and cut into chunks
- 1 large potato, peeled an cut into chunks
- Pinch of salt
- ½ cup almond milk
- ½ teaspoon salt
- Pepper to taste
- 1 Tablespoon of chives for garnish
Directions:
- Bring a large pot of water to a boil. Add the rutabagas, parsnips, potato and pinch of salt.
- Cook the vegetables until tender, approx. 15 minutes
- Drain and place in large bowl
- Add almond milk, ½ teaspoon salt and pepper
- Beat with an electric mixer and whip until fluffy
- Garnish with chives and serve immediately
