Red Lentil Soup # 2

Ingredients:

  • 1 large onion (chopped)
  • 2 cloves garlic, minced
  • 1 Tablespoon tomato paste
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of ground chili powder
  • 1 quart vegetable broth
  • 2 cups water
  • 1 cup red lentils
  • 1 large carrot, peeled and diced
  • Juice of ½ lemon
  • 3 tablespoons cilantro (optional)

Directions:

  1. Sauté onions and garlic in a small amount of water
  2. Stir in tomato paste, cumin, chili powder, salt and pepper 
  3. Cook for a few minutes
  4. Add broth, water, lentils, carrots and simmer for 30 minutes
  5. Puree half of the mixture and return to pot.
  6. Add lemon juice
