Quinoa Tabbouleh

Ingredients:
- 1 cup cooked Quinoa
- 2-3 plum tomatoes, diced
- 1 orange pepper, diced
- 1 cup of peeled, seedless cucumbers, diced
- 1 tablespoons of fresh lemon juice
- ½ cup of green onions, thinly sliced
- 1 cup of garbanzo beans (optional)
- 1 cup of fresh parsley, chopped
- 2 tablespoons of fresh mint, chopped
- 1 tablespoon of fresh garlic, diced
- ¼ teaspoon of finely ground black pepper
Directions:
Mix all ingredients.
