Pignoli Cookies

Ingredients:

  • 1-1/2 cups cooked chickpeas or 1 (15 ounce) can low sodium or no salt added chickpeas, drained
  • 1 cup raw almonds
  • 4 pitted medjool dates or 8 regular dates
  • 1 apple, cored
  • 3 teaspoons almond extract
  • ¼ cup water
  • ¾ cup old fashioned rolled oats
  • 1/3 cup pine nuts

Directions:

  1. Preheat oven to 350 degrees F
  2. Blend chickpeas, almonds, dates, apple, almond extract and water in a high-powered blender until smooth.
  3. Place in a bowl and mix in oats
  4. Drop on a parchment-lined baking sheet in 2 tablespoon scoopfuls. Flatten a little with a fork and top with pine nuts, pressing into the dough to secure.
  5. Bake for 12 minutes

Makes 26 cookies
