Pignoli Cookies
Ingredients:
- 1-1/2 cups cooked chickpeas or 1 (15 ounce) can low sodium or no salt added chickpeas, drained
- 1 cup raw almonds
- 4 pitted medjool dates or 8 regular dates
- 1 apple, cored
- 3 teaspoons almond extract
- ¼ cup water
- ¾ cup old fashioned rolled oats
- 1/3 cup pine nuts
Directions:
- Preheat oven to 350 degrees F
- Blend chickpeas, almonds, dates, apple, almond extract and water in a high-powered blender until smooth.
- Place in a bowl and mix in oats
- Drop on a parchment-lined baking sheet in 2 tablespoon scoopfuls. Flatten a little with a fork and top with pine nuts, pressing into the dough to secure.
- Bake for 12 minutes
Makes 26 cookies
