Peanut Butter Coconut Balls

Ingredients:
- 1/3 cup figs (7 or 8 figs)
- 1-2 tablespoons soy, hemp or almond milk
- 1 cup old fashioned oats, chopped
- ½ cup natural, no-salt added peanut butter
- ½ cup shredded unsweetened coconut
- ½ cup raisins
- 1 teaspoon vanilla extract
- 1 cup chopped nuts
Directions:
- Blend figs and non-dairy milk in a high-powdered blender. Add enough milk for mixture to reach a thick, syrupy consistency.
- Mix blended fig mixture and remaining ingredients in a large bowl. Roll mixture into 14 balls. (Or save out the chopped nuts to roll the balls in.) Refrigerates on a plate lined with waxed paper about 1 hour. Store in the refrigerator.
