One Pot Fajita Pasta
Ingredients:
- 1 Red Pepper (sliced)
- 1 Yellow pepper (sliced)
- 1 Orange Pepper (sliced)
- 1 Onion (sliced0
- Unsalted Vegetable Broth
- ½ Teaspoon salt
- 1 Teaspoon pepper
- 1 Tablespoon Chili Powder
- 1 Tablespoon Cumin
- 1 Tablespoon Garlic Powder
- 5 cups Almond Milk (Unsweetened)
- 1 lb. Whole Grain Penne Pasta
- 3 Tablespoons of Nutritional Yeast
Directions:
- In a large saucepan, faux-sauté peppers and onions in a little vegetable broth until soft.
- Add all seasonings and stir well
- Add almond milk. Stir well and bring to a boil.
- Add penne pasta and cook to desired softness. Stir often while pasta is cooking
- At the very end, add nutritional yeast and stir well.
