No-Bake Energy Bites

These calorically dense taste sensations can be used as an occasional special treat or as a snack during a long hike, run or bike ride. Enjoy Life Dark Chocolate Morsels are specified as they are dairy-free..

Ingredients:

  • ½ cup almonds
  • ¼ cup milled flaxseeds
  • ¼ teaspoon salt
  • 1 cup pitted dates
  • ½ cup raisins
  • 4 oz. Enjoy Life Dark Chocolate morsels
  • ½ cup rolled oats
  • ½ cup shredded unsweetened coconut
  • 1/3 cup unsalted sunflower seeds
  • ½ teaspoon instant espresso (optional)

Directions:

  1. Process the almonds and the salt in a food processor for one minute
  2. Add the dates and the raisins and process for one minute or until evenly ground
  3. Add the milled flax seeds, rolled oats, shredded coconut and sunflower seeds to the food processor and pulse six times.
  4. Melt the chocolate morsels and add to the food processor. Pulse again to mix.
  5. Line an 8×8” baking pan with plastic wrap and spread mixture evenly over bottom. Refrigerate until firm, about 1 hour. Invert onto a cutting board, remove plastic, and cut into 36 squares.

Storage: Store it in an airtight container at room temperature for up to 2 weeks.
