No-Bake Energy Bites

These calorically dense taste sensations can be used as an occasional special treat or as a snack during a long hike, run or bike ride. Enjoy Life Dark Chocolate Morsels are specified as they are dairy-free..
Ingredients:
- ½ cup almonds
- ¼ cup milled flaxseeds
- ¼ teaspoon salt
- 1 cup pitted dates
- ½ cup raisins
- 4 oz. Enjoy Life Dark Chocolate morsels
- ½ cup rolled oats
- ½ cup shredded unsweetened coconut
- 1/3 cup unsalted sunflower seeds
- ½ teaspoon instant espresso (optional)
Directions:
- Process the almonds and the salt in a food processor for one minute
- Add the dates and the raisins and process for one minute or until evenly ground
- Add the milled flax seeds, rolled oats, shredded coconut and sunflower seeds to the food processor and pulse six times.
- Melt the chocolate morsels and add to the food processor. Pulse again to mix.
- Line an 8×8” baking pan with plastic wrap and spread mixture evenly over bottom. Refrigerate until firm, about 1 hour. Invert onto a cutting board, remove plastic, and cut into 36 squares.
Storage: Store it in an airtight container at room temperature for up to 2 weeks.
