No-Bake Apricot Bars
Ingredients:
- ½ cup dried apricots
- 1/3 cup unsweetened soy, hemp or almond milk
- ¾ cup old fashioned oats
- 1 cup raw cashews and/or almonds
- 2 tablespoons raw sunflower seeds
- 1 teaspoon ground flaxseed
- 1 cup dates pitted
- 1/3 raw cashew butter
- 1 teaspoon cinnamon
Directions:
- Soak apricots in nondairy milk for an hour.
- In a food processor, process oats until coarsely chopped. Remove and set aside.
- Place nuts, sunflower seeds, and flaxseed in food processor and chop into small pieces
- Add dates and cashew butter to food processor and process until very well combined and smooth. Mixture will start to form a ball. Add oat and nut mixture to food processor along with soaked, drained, apricot pieces and cinnamon, and combine.
- Press mixture into an 8 X 8 inch baking pan. Make sure it is well compacted. Cut into bars.
