Mushroom Quinoa Pilaf

Ingredients:

  • 2 cups quinoa
  • 4 cups low sodium vegetable broth
  • 16 ounces mushrooms, chopped
  • 1-1/4 cup sun-dried tomatoes soaked in hot water and sliced
  • 2 cups of frozen peas
  • ½ cup walnuts, chopped
  • Salt and pepper to taste (optional)

Directions:

  1. Water-Sauté mushrooms in large pot over medium heat with very small amount of water or veggie broth until cooked.
  2. Add quinoa and 4 cups of low sodium vegetable broth. Heat on high until boiling. Turn down heat to simmer until water is absorbed.
  3. Add peas, sun-dried tomatoes and walnuts during the last few minutes of cooking. Stir to mix.
