Mushroom Quinoa Pilaf
Ingredients:
- 2 cups quinoa
- 4 cups low sodium vegetable broth
- 16 ounces mushrooms, chopped
- 1-1/4 cup sun-dried tomatoes soaked in hot water and sliced
- 2 cups of frozen peas
- ½ cup walnuts, chopped
- Salt and pepper to taste (optional)
Directions:
- Water-Sauté mushrooms in large pot over medium heat with very small amount of water or veggie broth until cooked.
- Add quinoa and 4 cups of low sodium vegetable broth. Heat on high until boiling. Turn down heat to simmer until water is absorbed.
- Add peas, sun-dried tomatoes and walnuts during the last few minutes of cooking. Stir to mix.
