Millett Citron Vert
Ingredients:
- 7/8 cup millet
- ¼ large onion or ½ small onion diced
- 3 cloves garlic chopped
- 2 medium sized beets
- 2 carrots chopped
- 2 cups of low sodium tomato juice or vegetable juice.
- Juice of 1 lime
- Onion powder
- Garlic powder
- Turmeric
- Black pepper
Directions:
- Put millet, onion, garlic beets, carrots and low-sodium tomato or vegetable juice in a rice cooker and prepare it as you’d cook rice.
- When it is done, vegetable juice should be fully absorbed. Add the juice of 1 lime and the spices in the amount that you prefer.
- Stir very well
This can be enjoyed cold, but it is best served warm.
For a “cheesy” taste, add 2 to 3 tablespoons of nutritional yeast
