(Engine 2 Diet)
Ingredients:
2 stalks celery, sliced thin
1/2 onion, chopped
2 cloves garlic, minced
10 oz. firm tofu, drained
1/4 cup walnuts, finely ground
1-1/2 cups cooked brown lentils
1-1/2 cups quick-cooking oats
3 Tbls low sodium soy sauce
3 Tbls ketchup (additional for topping)
1 Tbls Dijon mustard
2 tsp dried parsley
1/2 tsp thyme
1/2 tsp sage
1/2 tsp rosemary
Directions: (use non-stick bakeware)
1. Pre-heat oven to 350 degrees
2. Saute celery, onion and garlic on high heat in skillet with a little water.
3. Remove from heat and cool.
4. Stir in sautéed vegetables and remaining ingredients, combine well.
5. Spoon mixture into loaf pan. Top with layer of ketchup.
6. Bake for 55 to 60 minutes, or until a toothpick comes out clean.
NOTE: For firmer loaf, add 1/2 to 3/4 cups of 100% whole grain breadcrumbs.
