I found a recipe for massaged kale on-line which was made with oil and coconut aminos–I decided to “tweak” it just a little–the result–DELICIOUS! I made a giant bowl of this and could have eaten the whole thing myself!
2/3 bunch of kale
1 avocado, mashed
3 T nutritional yeast*
1 t lemon juice (the original recipe called for 1 t of lemon juice and 1 t oil, so I used a whole, small lemon)
1 t Braggs liquid aminos (original recipe called for coconut aminos, can also use low-sodium soy sauce)
black pepper to taste
vegetables of choice
Wash kale and cut up into small pieces. Add avocado, nutritional yeast, lemon juice, and Braggs. Massage all ingredients together with your hands for 2-3 minutes, (the longer you massage the kale, the more tender it becomes). The kale will start to “wilt”. Add vegetables of choice, (red, yellow or orange bell peppers, scallions, cherry tomatoes or sun-dried tomatoes, etc.) and pepper to taste. Enjoy!

*I prefer to give people recipes calling for ingredients that can be bought in any market–nutritional yeast is one of my exceptions–it gives your dish a “cheesy” flavor. However, you have to buy it in a health food store or on-line. Once you try it, you will be hooked–I make several dishes that calls for this, so I buy it in bulk and it lasts forever!
