Kale and Rice

Ingredients:

  • large container of baby kale
  • 32 oz. vegetable broth (unsalted)
  • 3-4 cloves garlic (sliced or diced)
  • 1 can cannellini beans
  • brown rice cooked (1 cup or 2 “Boil in a Bags”)
  • garlic powder (optional)

Directions:

  1. Cover the bottom of a pan with a little bit of broth. Add garlic and cook to soften.
  2. Add kale and rest of vegetable broth. Stir and “sauté” until soft.
  3. Stir in beans and cook for a few minutes.
  4. Stir in cooked rice and heat.

(Optional – add garlic powder as kale is cooking down)
