Kale and Rice
Ingredients:
- large container of baby kale
- 32 oz. vegetable broth (unsalted)
- 3-4 cloves garlic (sliced or diced)
- 1 can cannellini beans
- brown rice cooked (1 cup or 2 “Boil in a Bags”)
- garlic powder (optional)
Directions:
- Cover the bottom of a pan with a little bit of broth. Add garlic and cook to soften.
- Add kale and rest of vegetable broth. Stir and “sauté” until soft.
- Stir in beans and cook for a few minutes.
- Stir in cooked rice and heat.
(Optional – add garlic powder as kale is cooking down)
