Garden-Fresh Salad
Ingredients:
- 1 cup long grain brown rice
- 4 ears of fresh corn, husked and silks removed
- 2 cups cherry or gape tomatoes cut in half
- 1-2 cups fresh arugula leaves or spinach
- 1 cup red onion, cut into thin slices
- 1 fresh jalapeno, seeded and thinly sliced (optional)
Directions:
- Prepare rice according to package directions and cool
- Grill corn and let cool. Trim corn off the cob by cutting close to the cob in long strips.
- Combine all ingredients and refrigerate for at least one hour before serving
- Drizzle your favorite fat-free salad dressing on top..
