Ingredients:
- ¼ cup applesauce or Sunsweet Lighter Bake
- 2 Tbsp ground flax seed mixed with 6 Tbsp water
- 1 cup molasses
- 2 cups dried figs (about 1 lb.) stems removed, chopped fine
- ½ tsp grated lemon peel
- 1 cup almond milk plus 2 tbsp apple cider vinegar or lemon juice (This is a substitute for buttermilk)
- ½ cup walnuts chopped
- 1-1/2 cups white whole wheat flour
- 1 cup whole wheat pastry flour
- ½ tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
Directions:
With Electric mixer, mix applesauce, flaxseed mixture, and molasses thoroughly
Add the figs, lemon peel, buttermilk substitute and walnuts. Blend one minute.
Add the flour, baking soda, baking powder, salt, cinnamon and nutmeg. Blend until everything is incorporated.
Lightly flour a soufflé pan and pour in batter. Bake @ 350 degrees F for approx 1 hour or until toothpick in the center comes out clean.
Spoon out onto plates or cut into wedges. Best if served warm.
