Fiesta Casserole

Ingredients:
- 1 red onion, diced
- 3 garlic cloves, minced
- 3 sweet potatoes, diced
- 2 cups whole kernel corn (defrosted)
- 14 oz fire roasted or regular diced tomatoes
- 15 oz. black beans drained
- 16 oz salsa
- 1 teaspoon cumin, ground
- 1 cup vegetable broth
Directions:
Add ingredients to slow cooker. Cook on low for 4.5 to 5 hours.
