Fiesta Casserole

Ingredients:

  • 1 red onion, diced
  • 3 garlic cloves, minced
  • 3 sweet potatoes, diced
  • 2 cups whole kernel corn (defrosted)
  • 14 oz fire roasted or regular diced tomatoes
  • 15 oz. black beans drained
  • 16 oz salsa
  • 1 teaspoon cumin, ground
  • 1 cup vegetable broth

Directions:

Add ingredients to slow cooker.  Cook on low for 4.5 to 5 hours.
