Emily’s Heavenly Holiday Fudge

Ingredients:

  • 2-1/4 cups cooked black beans or canned no salt added or low sodium black beans, drained
  • ½ cup natural cocoa powder
  • 1 cup Medjool dates, pitted and chopped
  • 3 apples, chopped
  • ¼ cup water
  • 1 banana
  • 2 teaspoons alcohol-free vanilla flavor
  • 1-1/2 cups walnuts

Directions:

Preheat oven to 350 degrees F

Place all ingredients except walnuts in a high-powered blender. Process until very smooth. Stir in walnuts by hand.  Bake in a 9 x 13 pan for 60 minutes.  Top will form a crust and the middle will remain gooey.

Refrigerate overnight. Cut into 1 inch squares.  Store cut up fudge between layers of wax paper in an airtight container in the refrigerator or freezer.
