This is one of the tastiest, easiest black bean soups ever!
Ingredients:
1 15. oz can of black beans, drained and rinsed
1 cup of salsa
1 1/2 cups of vegetable broth
1/2 teaspoon cumin
1 c frozen corn, thawed
dash of hot sauce (optional)
- Place 1 cup of beans, salsa, broth and cumin in a blender, puree until smooth.
- Transfer to a saucepan and add remaining beans, (I tend to add more), corn and hot sauce to taste.
- Stir to combine and heat thoroughly over low heat.
- Once warm, serve with chopped cilantro if so desired!
