Crockpot Soy Curl with Apple and Sweet Potato

Ingredients
· 6 cups (1 bag) Butler Soy Curls
· 48 oz. of low sodium vegetable Broth
· 4 sweet potatoes peeled and cut into 1-inch chunks
· Sea salt + cracked black pepper
· 4 cloves garlic finely minced
· 1 cup chopped red onion
· 2 cups unsweetened apple sauce
· 4 teaspoons apple cider vinegar
· 2 tablespoon curry powder you can also use cumin if you don’t have curry
· 1 teaspoon ground ginger
Instructions
1. Pour boiling low-sodium vegetable broth over Soy Curls in a large bowl. Let sit for 10 minutes or more
2. Drain and set aside
3. Layer the sweet potato chunks and soy curls in the bottom of a slow cooker.
4. Season with salt and pepper.
5. In a small bowl, stir together the garlic, red onion, apple sauce, cider vinegar, curry powder, and ginger.
6. Pour the mixture over the chicken and sweet potato chunks.
7. Cover and cook on low for 6-8 hours, until the and sweet potatoes are tender.
8. Serve alone or over rice.
