Chocolate Fudge Date Balls

Ingredients:
- 30 medjool dates (pitted)
- 1 cup walnuts
- 3-4 tbs cacao powder
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1 tbsp maple syrup (optional, depending on bitterness of cacao powder)
Directions:
Add nuts to food processor and pulse until they are like coarse bread crumbs. Set aside.
Add dates, vanilla, almond extract and maple syrup then pulse until slightly sticky, then add chopped walnuts and cacao and process until combined.
Roll into balls or press dough into a 9×9 pan lined with parchment paper to cut small squares. Refrigerate up to 1 week or freeze to keep longer.
