Cauliflower Soup
Ingredients:
- 1 large head of cauliflower cut into small florets
- 5 medium potatoes, peeled and diced
- 1 large onion diced
- 4 medium carrots peeled and diced
- 2 celery ribs diced
- 1 carton (32 oz) vegetable stock
- 1 teaspoon garlic powder
- 1 tsp turmeric
- 1 tablespoon cinnamon
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ tsp crushed red pepper flakes
Directions:
- In a Dutch Oven over medium-high heat, bring all ingredients to a boil and stir until vegetables are tender (approximately 20 to 30 minutes.)
- Remove from heat and cool slightly
- Process in batches in a blender or food processor until smooth. You can add more water or stock for desired consistency.
