Black Bean Soup
Ingredients:
- 1 small onion chopped
- 3 cloves garlic
- 1 tablespoon chili powder
- 1 tablespoon of ground cumin
- Pinch of red pepper
- 3 cups cooked black beans or 2 (15 oz) No Salt Added cans of black beans
- 8 cups vegetable broth (low sodium)
- 1 can diced no-salt added diced tomatoes
- 1 small bag of frozen corn
- 10 oz. box of cut-up mushrooms
- 2/3 cup low sodium salsa
- 1 tablespoon of lime juice
- ¼ cup chopped cilantro
- 4 green onions (scallions) chopped
Directions:
Sauté onions, garlic and mushrooms in a splash of the broth until tender. Add cumin, chili and cayenne and stir until combined. Add beans, tomatoes, corn, vegetable broth, salsa and lime juice. Bring to a boil, then cover and simmer 45 minutes. Top with cilantro and green onions.
