Black Bean Soup

Black Bean Soup

Ingredients:

  • 1 small onion chopped
  • 3 cloves garlic
  • 1 tablespoon chili powder
  • 1 tablespoon of ground cumin
  • Pinch of red pepper
  • 3 cups cooked black beans or 2 (15 oz) No Salt Added cans of black beans
  • 8 cups vegetable broth (low sodium)
  • 1 can diced no-salt added diced tomatoes
  • 1 small bag of frozen corn
  • 10 oz. box of cut-up mushrooms
  • 2/3 cup low sodium salsa
  • 1 tablespoon of lime juice
  • ¼ cup chopped cilantro
  • 4 green onions (scallions) chopped

Directions:

Sauté onions, garlic and mushrooms in a splash of the broth until tender. Add cumin, chili and cayenne and stir until combined.  Add beans, tomatoes, corn, vegetable broth, salsa and lime juice.  Bring to a boil, then cover and simmer 45 minutes.  Top with cilantro and green onions.
