Black Bean Pasta

Ingredients:

  • Black Bean Pasta (12 oz.)
  • 10 oz.  bag of riced cauliflower
  • ¼ cup onions
  • Italian Seasoning
  • ½ cup Kalamata olives (chopped)
  • ¼ cup fresh parsley

Directions:

  1. Boil pasta according to package instructions (Reserve pasta water)
  2. Sauté onions in small amount of water
  3. Add cauliflower and seasoning and sauté until tender 
  4. Add chopped olives, then parsley
  5. Add 1 – 2 Ladles of pasta water
  6. Salt and pepper to taste.
  7. Add to pasta and serve.

If too dry, add water or low sodium vegetable broth.
