Ingredients:
- Black Bean Pasta (12 oz.)
- 10 oz. bag of riced cauliflower
- ¼ cup onions
- Italian Seasoning
- ½ cup Kalamata olives (chopped)
- ¼ cup fresh parsley
Directions:
- Boil pasta according to package instructions (Reserve pasta water)
- Sauté onions in small amount of water
- Add cauliflower and seasoning and sauté until tender
- Add chopped olives, then parsley
- Add 1 – 2 Ladles of pasta water
- Salt and pepper to taste.
- Add to pasta and serve.
If too dry, add water or low sodium vegetable broth.
