Berry Cobbler
Original Recipe from “Food For Life”
Ingredients:
- 1-½ cups whole wheat pastry flour
- 1 cup of date sugar
- 1 tablespoon baking powder
- ½ teaspoon salt1/2 cups soy milk or other plant milk
- 4 cups berries (boysenberries, blackberries, raspberries)
Directions:
- Preheat the oven to 350 degrees F
- In a mixing bowl, stir together the dry ingredients, then add the soymilk, and stir until batter is smooth.
- Spread the berries and any juice evenly in a 9 x 13 inch baking dish. Pour in the batter. Bake for 45 minutes, or until lightly browned. Serve warm.
