Berry Cobbler

Original Recipe from “Food For Life”

Ingredients:

  • 1-½ cups whole wheat pastry flour
  • 1 cup of date sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt1/2 cups soy milk or other plant milk
  • 4 cups berries (boysenberries, blackberries, raspberries)

Directions:

  1. Preheat the oven to 350 degrees F
  2. In a mixing bowl, stir together the dry ingredients, then add the soymilk, and stir until batter is smooth.
  3. Spread the berries and any juice evenly in a 9 x 13 inch baking dish. Pour in the batter.  Bake for 45 minutes, or until lightly browned.  Serve warm.
