Balsamic Vinaigrette

Makes 2-1/2 cups

Ingredients

¼ cup balsamic vinegar

¼ cup apple cider vinegar

¼ cup red wine vinegar

¼ unseasoned rice wine vinegar

1 cup water

3-4 garlic cloves

¼ cup ketchup (optional)

1 TBLS Dijon mustard

1-2 TBLS Maple Syrup

½ tsp guar gum* (optional)

DIRECTIONS

  • Pour all four vinegars in blender
  • Add garlic, mustard, ketchup water and maple syrup
  • Blend until mixture is very smooth
  • With blender running, slowly add guar gum to avoid clumping

*Guar gum is a thickener to help dressing stick to the greens.

NOTE: Dressing works well without this thickener

Dressing also works well with just balsamic and apple cider vinegars, ½ cup each.
