Almost Instant Peanut Sauce and Chilled Peanut Noodles
Chef Sroufe makes this as a special treat due to its high fat content
Almost Instant Peanut Sauce
Ingredients:
- ½ cup smooth peanut butter
- ¼ cup low-sodium soy sauce or tamari
- 2 tablespoons rice vinegar
- ¼ cup brown rice syrup
- ¼ teaspoon ground ginger
- ¼ teaspoon cayenne pepper (optional)
Directions:
- Combine all ingredients in a bowl and whisk well.
- Store refrigerated in an airtight container for up to 7 days.
Chilled Peanut Noodles
Ingredients:
- 1 pound of whole grain spaghetti or other pasta
- ½ – ¾ cup Almost Instant Peanut Sauce (see recipe above)
- 1 cup chopped green onion, white and green parts
- Chopped peanuts for garnish
Directions;
- Cook the spaghetti according to package instructions
- Drain the noodles, rinse under cold water, and drain again
- Place the cooked spaghetti in a bowl, add the peanut sauce, and toss to mix well.
- Serve garnished with the chopped green onion and chopped peanuts.
