Chocolate Cherry Cookies
Serves: 12
Ingredients:
- ¾ cup dates, soaked for 15 minutes in warm water, then drained
- 1 very ripe banana
- 2 tablespoons raw almond or cashew butter
- 1 cup old fashioned oats (see note)
- ½ cup almond flour (purchased or ground from raw almonds)
- 2 tablespoons natural cocoa powder
- ½ cup chopped unsweetened dried cherries
- 1 teaspoon alcohol-free vanilla or almond extract
Instructions:
- Preheat oven to 350 degrees F.
- Add dates to food processor and pulse until they are blended and start to form a ball. Add in the banana and almond butter and process until well-combined..
- Add in oats, almond flour, cocoa powder, and vanilla extract and process until mixture forms a dough, If mixture is too wet, add more oats to adjust consistency. Add dried cherries and pulse again until just mixed. Chill dough for 10 minutes.
- Drop by tablespoon onto a non-stick, or parchment paper lined cookie sheet. Bake for 15 – 17 minutes.
NOTE: For a smoother texture cookie, the oats may be ground into flour using a food processor or a high-powered blender.
