Mixed Fruit Cobbler
Original recipe from Leanne Campbell – The China Study Cookbook
Ingredients:
For the filling:
- 4 cups berries; if frozen, thaw first (use blueberries, blackberries, raspberries, or a mixture)
- 3 tablespoons maple syrup
For the crust:
- 1 cup whole wheat pastry flour
- 4 tablespoons date sugar
- 1 teaspoon baking powder
- ½ cup almond milk
Directions:
- For the filling, preheat the oven to 400 degrees F
- In a large bowl, combine the berries and the maple syrup. Spread in a “9 x 9” baking dish.
- In a separate bowl, for the crust, combine the flour, date sugar and baking powder. Add the milk and stir to mix.
- Spread the mixture over the berries (don’t worry if they aren’t completely covered) and bake until golden brown, about 25 minutes. Let cool for 10 minutes before serving.
