Chocolate Power Bites

(From The Plant Pure Nation Cookbook – Kim Campbell)

Ingredients:

  • 1 cup walnuts
  • 1 cup pitted Medjool dates
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon vanilla or coconut extract
  • ¼ cup unsweetened coconut flakes, for garnish

Directions:

  1. Line a 9 x 9 inch pan with parchment paper
  2. Place all of the ingredients except coconut flakes into a food processor and blend until a thick dough forms. You may need to add a small amount of water here if the consistency is too dry.
  3. Press the chocolate mixture into the prepared pan.
  4. Refrigerate for 1 hour.
  5. Cut into 24 bites and serve. Garnish the tops of the bites with coconut flakes.

Yields: 24 bites

Variation: Replace ½ of the dates with dried cherries and omit coconut.

These freeze well.
