Chocolate Power Bites
(From The Plant Pure Nation Cookbook – Kim Campbell)
Ingredients:
- 1 cup walnuts
- 1 cup pitted Medjool dates
- ¼ cup unsweetened cocoa powder
- 1 teaspoon vanilla or coconut extract
- ¼ cup unsweetened coconut flakes, for garnish
Directions:
- Line a 9 x 9 inch pan with parchment paper
- Place all of the ingredients except coconut flakes into a food processor and blend until a thick dough forms. You may need to add a small amount of water here if the consistency is too dry.
- Press the chocolate mixture into the prepared pan.
- Refrigerate for 1 hour.
- Cut into 24 bites and serve. Garnish the tops of the bites with coconut flakes.
Yields: 24 bites
Variation: Replace ½ of the dates with dried cherries and omit coconut.
These freeze well.
