Couscous with Dried Cranberries and Mandarin Oranges

Ingredients:
- 1 cup whole wheat couscous
- 2 cups of fresh squeezed orange juice
- 3 tablespoons of lemon juice
- 2 teaspoons fresh grated orange zest
- 1 teaspoon fresh ginger (ginger in a jar)
- ½ cup dried cranberries
- 1 15 ounce can of Mandarin Oranges in water. (If you use light syrup, rinse it off)
- 1/3 cup sliced unsalted almonds
Directions:
- When cooking couscous, use orange juice instead of water.
- After cooking couscous, add lemon juice, orange zest, ginger and dried cranberries. Gently stir in mandarin oranges and almonds.
