Taco Burgers

Ingredients:
- ¾ cup chopped walnuts
- 1 1/2 cups cooked pinto beans
- 1 cup cooked lentils
- ¼ cup cilantro
- 1 tablespoon chili powder
- ½ to 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon oregano
- ½ teaspoon smoked paprika
- 1 – 2 tablespoons salsa
- 1 red bell pepper, diced
- ½ red onion, diced
- 2 garlic cloves, minced
- ¼ cup low sodium vegetable broth
Directions:
- Preheat oven to 375 degrees F – line cookie sheet with parchment paper
- In skillet, heat vegetable broth – faux sauté pepper, onion and garlic 5 to 6 minutes.
- Pulse walnuts until a fine crumb in food processor, Add beans, lentils, cilantro, chili powder, salt, cumin, oregano, smoked paprika and 1 tablespoon salsa – pulse. If too dry, add more salsa.
- When peppers and onions are done, add to bean mixture and pulse a few times.
- Form into patties – bake 25 to 30 minutes, flipping after 15.
Note: by making patties “slider” size, they will hold together better.
