Sweet Potato Carrot Gnocci

SWEET POTATO CARROT GNOCCHI

Gnocchi

Three sweet potatoes Three large carrots

1 tsp cinnamon

1 cup white whole wheat flour (approximately)

Glaze (optional)

2 cups pure maple syrup (approximately)

3 tsps cinnamon

Gnocchi

Peel sweet potatoes and carrots and place them into a steamer and cook until tender, approximately 20 minutes.

Smash potatoes and carrots in a bowl and add one tsp of cinnamon.

Gradually, add flour to mixture until it all comes together.

Knead dough until dough forms a ball.

Shape small portions of the dough into long “snakes” on a floured surface.

Cut snakes into 1/2” – 1 inch pieces.

Bring pot of lightly salted water to a boil.

Drop in gnocchi and cook 3-5 minutes or until gnocchi have risen to the top.

Remove with slotted spoon and place on paper towel to remove some of the water on them.

Glaze

In a small saucepan heat maple syrup and cinnamon on low until hot and pour over gnocchis.
