Spicy Greens and Beans
Ingredients:
- Head of Cabbage
- 2 Heads of Escarole
- 11 oz. pkg Baby Spinach
- 1 – 15 oz can of white beans
- 3 cloves garlic, minced
- ¾ teaspoon sweet paprika
- 2 tablespoons date sugar
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1/8 – ¼ teaspoon Cayenne pepper (to taste)
- 1 teaspoon crushed Anise seeds
- ¾ cup red wine
- ½ teaspoon crushed red pepper
- ½ teaspoon granulated garlic
- ¼ teaspoon ground nutmeg.3 cloves garlic, minced
Directions:
- Slice Cabbage and cut up escarole
- In a large (wide) pot, put approximately 8 to 10 cups of water
- Cook cabbage first, on slow boil
- Add all spices and wine
- Once cabbage is tender, add escarole and spinach
- Let simmer until greens are tender (to your preferred tenderness)
- Add 15 oz can white beans and let cook another 5 minutes
This goes great with a serving of corn bread.
