Roasted Honey Apricot Cauliflower

Ingredients:
- 2 Heads of cauliflower cut into small florets
- 3 tablespoons organic honey
- 3 tablespoons garlic, minced or chopped
- 10-15 apricots, sliced
- Salt and pepper (optional)
Directions:
- Cut cauliflower into small florets and place on parchment paper-lined sheet.
- Mix organic honey and minced garlic and spoon on top of each floret,
- Add salt and pepper, if desired
- Bake at 400 degrees F for 25 – 30 minutes
- Place in serving dish and top with apricots.
NOTE: You can add some chopped nuts, if desired.
