Roasted Honey Apricot Cauliflower

Ingredients:

  • 2 Heads of cauliflower cut into small florets
  • 3 tablespoons organic honey
  • 3 tablespoons garlic, minced or chopped
  • 10-15 apricots, sliced
  • Salt and pepper (optional)

Directions:

  1. Cut cauliflower into small florets and place on parchment paper-lined sheet.
  2. Mix organic honey and minced garlic and spoon on top of each floret,
  3. Add salt and pepper, if desired
  4. Bake at 400 degrees F for 25 – 30 minutes
  5. Place in serving dish and top with apricots.

NOTE: You can add some chopped nuts, if desired.
