Pumpkin Pineapple Cookies

Ingredients:

1 cup pumpkin puree or baked sweet potatoes

1 small banana, mashed

½ cup crushed pineapple

¾ cup date sugar

¾ cup whole wheat flour

½ teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon pumpkin spice

½ teaspoon nutmeg

3 cups quick oats (not instant)

1 cup raisins

½ cup chopped walnuts

Directions:

Combine pumpkin, banana and pineapple. In a separate bowl, combine the rest of the ingredients. Stir in pumpkin mixture. Drop by tablespoonfuls onto cookie sheet and press down slightly. Bake for 10 minutes at 350 degrees.

Note: You may use fresh or canned sweet potatoes instead of the pumpkin.
