Polenta Stacks

 

 

The Chef and the Dietician

Ingredients:

Basil Pesto

1 can cannellini beans (rinsed and drained)

1 oz. fresh basil

2-3 cloves of garlic

1 Tblsp Miso

1/4 cup lemon juice

Blend all ingredients thoroughly.

Polenta

Tube of Polenta (normally found in produce dept). Check ingredients to make sure Non-GMO.

Cut into slices. Can use as is or bake slices until slightly browned.

Sweet Potatoes

Slice and place on cookie sheet. Bake at 350 degrees until tender.

(Can also cook the potatoes in the microwave, then slice them)

Tomatoes

Plum tomatoes.  Slice.

Balsamic Syrup

Used to drizzle over top layer.

Directions:  Layer as follows

Slice of Polenta

Pesto

Slice of Sweet Potato

Pesto

Slice of Tomato

Dab of Pesto in center of slice (optional)

Drizzle with Balsamic

Note:  If you want smaller bite size pieces….place 4 toothpicks in the stack. Then cut the stack into 4 pieces.
