Nutritarian Chocolate Chip Cookies

Ingredients:

  • 1 – ½ cups cooked chick peas or 1 (15 oz.) can low sodium or no salt added chickpeas, drained
  • ½ cup raw almonds
  • ¾ cup dates (packed)
  • 1 apple cored
  • 1 teaspoon alcohol-free vanilla flavor
  • ¼ cup water
  • 2/3 cup old fashioned rolled oats
  • 2/3 cup 100% cacao chocolate chips

Directions:

  1. Preheat oven to 350 degrees F
  2. Blend chickpeas, almonds, dates, apple, vanilla and water in a high-powered blender until smooth.
  3. Place in bowl and mix in oats and chocolate chips.
  4. Drop on a parchment-lined baking sheet in 2 tablespoon scoopfuls. Flatten a little with a fork.  Bake for 10 minutes.

Makes 20 cookies
