Lentil Biscuits
Ingredients:
- 1 cup red lentils
- ½ cup sunflower seeds
(soak lentils and sunflower seeds for at least 2 hours)
- 1 onion
- 2 cloves garlic
- ½ teaspoon cumin
- ¼ teaspoon turmeric
- 1 tablespoon curry
- Pinch of cayenne
- 1 tablespoon dried parsley
Directions:
- Puree all ingredients except lentils, sunflower seed and parsley in food processor.
- Drain lentil/sunflower mixture and add to onion mixture, pureeing until smooth. Add parsley
- Drop by spoon onto a baking sheet at 350 degrees for 20 to 25 minutes
*Variation; can use Italian seasoning in place of Indian seasoning.
