Lemon Balls

Serves: 15

Ingredients:

  • 2 cups raw cashews
  • 2 organic lemons, juiced and zested
  • 1 ½ cups unsweetened shredded coconut
  • ½ cup of dates, pitted

Directions:

  1. Place cashews in a food processor and process to a fine powder
  2. Add lemon juice, lemon zest, coconut and dates and process until consistency is thick and moist, adding a bit of water if needed.
  3. Using hands, roll into small bite size balls and then roll into some extra shredded coconut to coat the ball.
  4. Refrigerate or freeze until firm.

(Makes approximately 30 balls)
