Indian Mango Salad
(adapted from a Dr. Fuhrman recipe www.DrFuhrman.com )
Ingredients:
- 2 organic celery stalks, chopped
- 2 ripe mangos, peeled and sliced
- 2 firm tomatoes, chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- ½ tablespoon Dr. Fuhrman’s VegiZest (or other seasoning)
- 2 teaspoons curry powder
- 2 tablespoons mangosteen vinegar or other fruit vinegar
Directions:
Combine all ingredients in a bowl. Cover and refrigerate for 1 hour before serving to allow flavors to blend.
