Indian Mango Salad

Indian Mango Salad

(adapted from a Dr. Fuhrman recipe www.DrFuhrman.com )

Ingredients:

  • 2 organic celery stalks, chopped
  • 2 ripe mangos, peeled and sliced
  • 2 firm tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • ½ tablespoon Dr. Fuhrman’s VegiZest (or other seasoning)
  • 2 teaspoons curry powder
  • 2 tablespoons mangosteen vinegar or other fruit vinegar

Directions:

Combine all ingredients in a bowl. Cover and refrigerate for 1 hour before serving to allow flavors to blend.
