Holiday Mashed Sweet Potatoes

Ingredients:
- 5 medium to large sweet potatoes
- ½ cup of warm almond milk
- ½ teaspoon of vanilla
- 2 – 3 tablespoons of wrm pure maple syrup
- ¼ teaspoon of ground cinnamon
Directions:
- Scrub, peel, and cut sweet potatoes into small pieces (approx. ¾ – 1” cube size)
- Bring large pot (or use two smaller pots) of water to a boil and add sweet potatoes. Cook approx. 20 – 30 minutes, until potatoes are soft, then drain the water.
- Slowly add the warmed almond milk, a little at a time, and use a hand masher or an electric hand mixer (low speed) to blend in the almond milk and mash the potatoes, until the consistency you prefer is obtained.
- Add the cinnamon and maple syrup and thoroughly blend into the potatoes
Optional: Garnish with chopped pecans and walnuts.
