Holiday Mashed Sweet Potatoes

Ingredients:

  • 5 medium to large sweet potatoes
  • ½ cup of warm almond milk
  • ½ teaspoon of vanilla
  • 2 – 3 tablespoons of wrm pure maple syrup
  • ¼ teaspoon of ground cinnamon

Directions:

  1. Scrub, peel, and cut sweet potatoes into small pieces (approx. ¾ – 1” cube size)
  2. Bring large pot (or use two smaller pots) of water to a boil and add sweet potatoes. Cook approx. 20 – 30 minutes, until potatoes are soft, then drain the water.
  3. Slowly add the warmed almond milk, a little at a time, and use a hand masher or an electric hand mixer (low speed) to blend in the almond milk and mash the potatoes, until the consistency you prefer is obtained.
  4. Add the cinnamon and maple syrup and thoroughly blend into the potatoes

Optional: Garnish with chopped pecans and walnuts.
