Ancient Grain Salad
Ingredients:
- 1 cup freekeh (or quinoa or farro)
- 2-1/2 cups water
- 1 cup shelled edamame (see note)
- ½ cup diced red bell pepper
- ¼ cup chopped red onion
- ¼ cup raisins or currants
- 1 lime, juiced
- 2 tablespoons balsamic vinegar
- ½ cup pineapple, diced
Instructions:
- In a medium saucepan, combine the freekeh and water, bring to a boil. Reduce heat to low, cover and simmer for 20-25 minutes or until freekeh is tender and water has been absorbed. Let cool.
- Transfer freekeh to a mixing bowl and stir in remaining ingredients. Chill before serving.
Note: Cooked green peas or other varieties of cooked beans may be substituted for the edamame.
