Nutritarian Cream Cheese
Ingredients:
- 2 tablespoons agar agar flakes (see note)
- 1 cup water, divided
- ½ cup raw cashews
- 1 tablespoon hemp seeds
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon arrowroot powder
- ½ teaspoon reduced sodium miso
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions:
- Mix agar agar and a ½ cup of water in a small pan. Slowly bring to a boil and simmer until flakes dissolve, about 3 – 5 minutes. Remove heat.
- Blend remaining ½ cup water and all other ingredients in a high-powered blender until smooth. Add agar agar mixture and blend again until well-dispersed.
- Refrigerate for 1 – 2 hours until firm
NOTE: If using agar agar powder instead of flakes, reduce amount to 2 teaspoons. To make without agar agar, use only enough water to achieve desired consistency, about 2 tablespoons. It will not firm up or “gel”.
